Dairy Products From Our Farm

dairyThe Bookamer Farm has a variety of milking cows. Our family has loved and learned the many aspects of each type of cow and its benefits to the circle farm. The main benefit is having an animal capable of producing on grass and minimal extras. Thus the term “grass based”. The reward is a food that is better for you combined with an animal that works with nature and the land. The land feeds the cow, who in turn feeds back to the land by way of fertilizer and a continual grazing that the land desires. The continual pruning and feeding in a manner controlled by the caretaker keeps all balances in check.

The circle farm then goes full circle, from the animal to the table. We can show you the many uses we have for our milk. Learn not only the best and most efficient way to care for the cow but also what to do with all the milk you will be receiving. We offer classes teaching the making of dairy products from butter to cheese. We also sell supplies for the making of various dairy products. Cheese cultures, rennet and the like are available.

Classes are available in:
     Cheese making
     Beginner dairy products (butter, cottage cheese, sour cream, kefir and yogurt)
     Mozzarella Cheese in 90 minutes
     Making cheese curds and Ricotta cheese

Class size is a minimum of 2 persons and maximum of 4. Cost is $25.00 per person for 2½ hours of instruction time, written recipes to take home, necessary ingredients, and 2 gallons of our very own raw milk (you bring your own glass containers) to make a batch at home. We feel it important that as soon as possible after receiving instruction on how to create our dairy products, and while it is still fresh in your mind, that you try it at home. We also enjoy visiting organizations and classrooms with our “From the cow to the pepperoni” demonstration. We take the group (age considered and hands on activity provided), from 2 gallons of milk to a pepperoni pizza party! We start by explaining the difference in cow breeds (what is the difference between a Jersey and a Holstein?). Then by the addition of a few simple substances it is miraculously changed into cheese!! With stories of how we get this ingredient dotting the way to make a fun and educational party. Scheduling of times and cost determined by group size.
